Is a hand press enough, or do I need an electric juicer?

What fruit actually fits in it?

Halved citrus, cut across the segments, cut side down. That is the whole technique. Get the orientation right and you get almost everything out of the fruit in one pull.

Works on Avoid
Limes, lemons, mandarins, clementines and standard oranges cut in half. Small grapefruit if you quarter them first. Whole uncut fruit, oversized navel oranges that will not seat in the cup, pomegranates, apples, tomatoes, and anything frozen.

The steps: halve the fruit, drop it cut face down into the strainer cup, bring the lever down slowly and hold for a second at the bottom. The pulp and seeds stay in the cup, strained juice runs out of the spout into your glass. Release, tip the spent half into the bin, repeat.

The step people skip is rinsing it immediately. Citrus acid and pulp dry into a sticky film in about an hour and then you are scrubbing. Thirty seconds under a hot tap while your juice is still cold and it is done.

Squeezed by hand, without the hand.

Juicing a lemon by hand is a small, stupid tax on cooking. You squeeze, half of it runs down your wrist, seeds land in the pan, and you still leave a third of the juice in the rind. Then your fingers sting for an hour because of the cut you forgot you had. It is enough friction that a lot of people just reach for the bottle of concentrate instead, and everything they cook tastes faintly of it.

A lever press removes all of that. Your body weight does the work through the arm, the seeds are caught before they reach the glass, and your hands stay clean and dry. Fresh citrus stops being a decision and becomes a reflex.

Why the lever is the whole product

Hand strength tops out fast. A long lever arm multiplies whatever force you put in, which is why a press gets juice out of a lime that your hands physically cannot — the pith gets compressed flat and the last of the liquid comes with it. That is the difference between half a glass and a full one from the same three oranges.

The two things that decide whether a press survives are the pivot and the cup. A weak pivot develops play, the arm starts to wobble sideways, and eventually the press twists instead of pressing. The cone and strainer cup matter just as much: a shallow cone leaves juice in the rind, and a strainer with holes too large sends seeds straight into your glass.
