Which size do I actually need?

Muslin is a layering blanket, not a comforter, so sizing up is rarely a mistake. The only real question is whether it lives on one person, on a bed, or over the back of a sofa where it gets dragged around by everybody.

150 × 200 cm	One person, one armchair. You want something to pull over your legs while you read, and you want to be able to fold it small enough to stuff in a basket afterwards.
200 × 230 cm	It's going on a bed you share, and you'd like it to hang over the sides rather than sitting on top like a placemat. Also the size that survives two people on a sofa without a tug-of-war.
230 × 250 cm	A big bed, or you want the drop to reach the floor so the base of the frame disappears. Also the pick if a dog has opinions about where they sleep.

Will it stay soft, or go stiff after a few washes?

Muslin does the opposite of most bedding — it gets better with washing. The loose gauze weave relaxes each cycle, which is why the crinkle deepens instead of flattening out.
