Do I need two pairs of tongs?

This comes as a set of two, and the honest answer is that one pair of tongs is never enough in a working kitchen. The moment you have used one on raw chicken it is out of action for everything else until it has been washed.

Right for you if What that looks like
You cook meat and vegetables in the same session One pair stays on the raw side, one pair handles the cooked side, and nothing crosses over. This is the main reason to own two.
You serve at the table as well as cook One lives by the hob, the other goes in the salad bowl. Wood and steel look like serving pieces rather than kitchen kit.
You grill or barbecue One stays inside, one goes outside and stays outside, so you are not carrying the same pair back and forth.

If you only ever want one pair, the second still earns its place — it is the one you reach for when the first is in the sink.

Will the wooden handles split or the steel go dull?

Wood and steel fail in opposite ways, so they need opposite treatment. Steel does not mind water. Wood minds it a great deal, and a soaking is what cracks a handle six months later.

    Works on Avoid
Turning meat, lifting vegetables, tossing pasta and serving salad Leaving them to soak in the washing-up bowl
A quick hand wash in warm soapy water, then dried straight away Resting the steel end on a lit gas ring while you do something else
Occasional food-safe oil on the wood if it starts looking dry Bleach and harsh detergent, which strip the wood and leave it grey

The step people skip: dry the handles before they go back in the drawer. Wood put away damp is wood that will split along the grain, and it always happens at the point where the handle meets the steel.

Stop turning sausages with two forks and a lot of optimism.

Everybody has a drawer implement they use for jobs it was not designed for. A fork to flip chicken thighs, which tears them. A spoon to lift asparagus, which drops it. A spatula for a pan of roasting vegetables, which just pushes them into a corner. Tongs solve all three because they grip rather than balance — you pick something up, you turn it, you put it down where you meant to. The reason it feels like a bigger upgrade than it should is that you have been improvising for years.

Why the wood-and-steel combination is the right one

All-steel tongs have one flaw everyone discovers within a week: the handle gets hot. Not immediately, but after a few minutes over a pan the metal has conducted the heat straight up into your fingers and you are switching hands. All-wood or all-plastic tongs have the opposite problem — the gripping end is too soft and too thick to get under a flat piece of food, so you end up dragging things around the pan instead of lifting them. Putting wood at the handle and steel at the business end takes the strength where you need strength and the insulation where you need insulation. The wood also gives the tongs weight and balance so they sit in the hand rather than feeling like a bent strip of metal, and it is the reason a pair of these can go straight from the hob onto the table without looking out of place.

    • Set of 2 — two identical pairs rather than a large and a small. That matters more than it sounds: identical tongs means you never have to think about which one is the good one, and either can do any job. Keep one at the hob and one wherever the second is most useful, whether that is the salad bowl, the barbecue or the drawer as a spare.
