Which length do I need in front of my sink?

Measure the run of floor you actually stand on, not the width of the whole kitchen. The three sizes are about coverage, not about how much mat you get for the money.

Will it slide around on my floor?

A kitchen mat that moves is worse than no mat, so it's the right thing to ask. The answer depends more on the floor than on the mat.
