Which size fits the gap beside my sink?

38 × 25 cm	A galley kitchen or an apartment where the counter beside the sink is a narrow strip. One or two people, a few plates and mugs after dinner, and you want the mat to disappear into a drawer between uses.
43 × 33 cm	You cook properly and there is always a pan, a chopping board and a colander waiting at once. Also the right one if you want to stand the whole dish rack on top of it instead of draining straight onto the stone.

If you are between the two, go up — an oversized mat still rolls up, an undersized one leaks off the edge.

Will it mark my counter, and does it go slimy underneath?

Silicone does not absorb water, which is the whole reason a cloth mat goes sour and this one does not. The thing that causes trouble is leaving it flat for a week without lifting it.

Rinse it under the tap, wipe with a soapy cloth, shake it off. The step people skip: lift the mat and dry the counter beneath it every couple of days. Water trapped between silicone and a sealed worktop is what leaves a dull patch — not the mat itself.

Roll it, do not fold it, if you are storing it in a drawer. Folds set into a crease that props the edge up.

The raised ribbing lifts everything off the surface so the water runs down into the channels between and sits below the dishes, out of contact with them. That is why a wine glass left overnight comes off dry rather than with a milky ring in the base. Silicone also grips — it does not skate across a wet worktop the way a plastic board does when you knock it with your hip.

The other thing silicone gets right is that it has no fibres. Nothing to hold onto grease, nothing to breed the smell that makes you throw a dish cloth out every few weeks. It goes back to being a blank slab with a rinse.
